Lamson & Goodnow 2 7/8" Trimming Knife with Rosewood Handles - This is a very handy and versatile little paring knife from LamsonSharp, the oldest cutler in the US. It is forged from a single piece of the finest high-carbon steel from Solingen, Germany.
The handles are natural Rosewood with a mineral oil finish and are held to the blade with three brass rivets for perfect balance and weight. The taper-ground blade is hand-edged and honed. Lamson & Goodnow will even sharpen this knife for you if it ever loses it's edge (you just pay the shipping).
