Stainless Steel Versus Non-stick Cookware Performance

February 7th, 2023

Whether you have lots of experience cooking or are evolving your culinary skills, you will need to choose the type of cookware and bakeware you prefer. Stainless steel is often preferred by experienced home chefs and professional chefs worldwide. However, non-stick surface technology has evolved to where it is also an excellent choice. Understanding the core characteristics of each type will help you decide if you prefer one or the other or some combination of both.

We offer two product lines that give you an excellent perspective on the advantages of stainless steel vs. a non-stick surface. 360 Cookware provides some of the highest quality stainless steel cookware available. The Rock by Starfrit provides a superb line of non-stick cookware which features their patented Roc-Tec Surface Technology.

360 Cookware provides stainless steel cookware that is constructed and finished uniquely in a way that provides lifetime quality performance. Each piece is crafted from multiple layers of high-quality metals,  beginning with a bonded core of 3 types of aluminum. The core provides superior heat conductivity and retention and is sandwiched between an interior and exterior layer of T-304 surgical stainless steel. This stainless steel cookware utilizes less energy and fewer ingredients than traditional cooking methods and is so heat-responsive that you cook only over medium heat or low heat, and in some cases, over no heat at all.

360 Cookware also utilizes innovative Vapor Cooking Technology with its pans that come with lids, which will change the way you cook food and how your food tastes. When applied to low or moderate heat, Vapor Cooking generates a unique vapor seal around the lid using the natural moisture already present in most foods. This means you don't boil away nutrients in vegetables by cooking them in water or baking out the juiciness of lean meats. The vapor seal redirects the food’s moisture back into the dish, so meals turn out not only splendidly cooked but actually more flavorful and nutritious. Vapor Technology elevates the advantages of waterless cooking which lets you create delicious, intensely flavorful, natural vitamin and mineral-rich meals undiluted by water or doused in oil, butter, or other fat and sodium-laden ingredients.

The ROCK by Starfrit non-stick cookware utilizes their patented Rock.Tec manufacturing process. This unique surface treatment uses small-pellet-impact technology to strengthen and densify the cooking surface. This treatment is not a coating but a process that permanently alters the surface, ensuring optimal application of the non-stick coating. The result is an outstanding release performance that is 3 times more efficient than traditional non-stick cookware. This breakthrough in cookware features an ultra-hard, rock-like surface which stands out for its extended durability, enhanced non-stick qualities, and improved corrosion, scratch, and wear resistance – characteristics that have rendered this go-to cookware choice for experienced home cooks and evolving gourmet chefs!

Most non-stick cookware is more forgiving than most stainless steel cookware in terms of heat conduction, clean up, and overall convenience. Purists will say that stainless steel cookware provides greater performance in terms of how food responds to different levels of heat and to the talent and finesse of a skilled chef. However, there is no denying that non-stick cookware is easier to use and clean, and provides excellent performance without constant attention and monitoring. Sticky foods like eggs are much easier to cook on a non-stick surface.
